EarthGirl Veronica, what makes you an EarthGirl?
I live according to the essence of my spirit rather than the ego. I am aware of life… I look at the world as a learning space for many souls to evolve… we are all here for a purpose, and embracing our challenges and keeping our hearts and minds open will take us to our destination of bliss. I try to be present in every moment, love all I can, spread words of wisdom and peace, set an example through my actions of charity and kindness, without judgement of others, keeping in mind we are all the same in different levels of evolution.
When did you become aware and fall in love with our planet and what did you do next?
I was raised by a mother who is a strong medium, and very spiritual. She has always done her best to make me aware of the beauty and perfection of life and everything in it. But it finally “kicked-in” my head a few years ago when I decided to quit my office job and go for what I always loved doing the most… Helping others to be healthier and happier. In order for me to be able to do that for a living, I started a business called Peace A’ Cake, which is a 100% natural vegan baking company. I also enrolled at the Institute for Integrative Nutrition in New York City, and I am currently studying to become a Holistic Health Counselor. I also have another love which is cycling, so this year, with the support and help of a group of amazing girls, I put together the first all women cycling team in Miami called the Rose Bandits.
What do you think is a simple change anyone can make to be more eco-friendly?
So many ways to become more eco-friendly… but for sure my favorite one is to start riding a bicycle!
What eco-friendly product do you use or wear regularly?
I have a saying and people always give me a funny look, “If you can’t eat it, don’t put it on your body!” I only use chemical-free body lotion, shampoo, conditioner, toothpaste, deodorant, etc. Most people dont really take into consideration our skin, hair and nails are all organs, therefore whatever you put on it will go into the system.
Picture this, you’re trapped on an island, with a tree that only grows one product. What is it?
Avocado! What a super food, full of all the nutrients I would need to be happy!
What are your daily earth-friendly actions?
Everything I do I do with consciousness… I do not consume any animal products, I am a vegan, my job is also to provide to people a yummy desert which is also 100% nutritional and healthy!

I also constantly post inspirational quotes on my facebook page about peace and love. I am always vibrating in a loving frequency, sending out only positive vibes, in tune with nature and the source of everything. It took me some time to get here, but now that my candle is lit, I am able to light others without losing my light.
Are you working on anything that we should know about that’s positively impacting our planet and its people?
My business, Peace A’ Cake, is an awesome project which both provides nutritious deserts for everyone, and is a great teaching tool I use to inform others about the importance of what we put in our bodies. I also give vegan baking classes at Wholefoods Lifestyle Center, and am getting certified to be a Holistic Health Counselor. My cycling team, Rose Bandits, is also another great tool to promote peace and health. Not only do we promote a healthy lifestyle by being active and having an awesome sport, we also do a lot of charity work, including charity rides, working with children in hospitals, donations, etc.

Some people tell me I am a witch… because everything I say, want or think always happens! lol… that’s only because I live 100% of the time connected to the source, in tune with my highest frequency… so I manifest beauty and love at all times.

I’ve know Veronica for about 2 years now. I had the pleasure of meeting her in the mid of 2008 at The Sports Club within the Four Seasons in Miami as she worked as a personal trainor. We’ve also worked together outside of the gym, Veronica assisted me as a model during my recent shoot for my company and in return I assisted her with business tips for her Peace-A-cake company. I’m very proud and excited to see Veronica on EarthGirlz as this is 100 percent all Veronica, this is how she really is on a daily basis.
